Raw "Mac and Cheese" Zucchini
Raw, healthy, delicious... What's not to love?
Okay, it doesn't taste exactly liked a box of kraft or Annie's, but we already know that stuff isn't too great for us anyway and this recipe is both yummy and good for you. Plus it's super easy and quick to make!
Why raw?
Raw foods have higher nutritional value then cooked foods. They help aid weight loss, reduce cravings, provide energy, vitality and healthier skin. Many people notice greater clarity of mind when they increase the amount of raw foods in their diet. This doesn't mean you have to go 100% raw all the time, but getting a substantial amount of raw foods in your diet on a regular basis can really improve how you feel and look.
Trying out this raw, easy recipe below is a great way to get started!
You will need some Zucchini and some nuts (hazelnuts or macadamia work great but you can use any kind), some nutritional yeast and olive oil.
Blend together 1/2 cup nuts and 1/2 cup nutritional yeast until it becomes powder. I use a food processor and blend the nuts first, then mix in the nutritional yeast.
Using a carrot peeler, a knife or some other tool, cut the zuch into thin noodle-like strips. Place them in a mixing bowl with 1/4 cup olive oil added on top.
Pour 1/2 cup of the nut/yeast mixture onto the zuch and oil. Using your hands or a spoon, mix everything up until it is evenly divided and the flavors have married.
Optional- top with garlic, chopped raw tomato or springs of basil.
You'll be amazed at the taste. Make extra because it gets eaten fast!!
