Ch-ch-ch-Chia Pudding!
I LOVE chocolate and I love creamy things like ice cream and pudding. This raw, vegan chia seed pudding totally satisfies my cravings for those things in a healthy and delicious way. Even better, chia pudding is so easy to make it almost makes itself for you. All you have to do is let it sit there, really!
Here's some banana chia pudding....and my FAVORITE chocolate chia pudding!
So how does one make this deliciousness?
(By the way, It's naturally vegan, raw, gluten free and sugar free)
It's simple: chia seeds soaked overnight turn into a simple pudding, similar in consistency to tapioca.
2/3 cup chia seeds
2 cups unsweetened non-dairy milk such as almond or rice milk (learn to make your own rice milk here)
Put chia seeds and milk in a 1-quart glass jar with a lid or in a tupperware container (I like glass because then you don't have the BPA chemicals from the plastic). Tighten the lid and shake well to thoroughly combine. Or simply stir together the seeds and almond milk in a bowl. Refrigerate overnight in whatever container you choose. When ready to serve, stir well. Spoon into bowls and top with whatever toppings you like, such as fruit and coconut.
To make it fun and fancy, try adding these ingredients before soaking:
1/2 teaspoon pure vanilla extract
Dried fruit like currants or chopped dried figs or dates
Fresh fruit
Nuts
Spices like cinnamon or nutmeg
unsweetened coconut flakes
Coconut milk
Cacao powder
Chocolate chips
Ginger
Seeds like hemp or sunflower
